I’m officially on my holidays 🎉 and heading stateside on Saturday.
Making some pizza dough for tomorrows lunch with a glass of the Pliny clone. Unfortunately I won’t be able to get proper Pliny in Tampa, but the craft beer scene there is so good I won’t care.

Ahhhh memories! I had a pint of Pliny the elder in a bar in San Diego called "Hamilton's tavern" back in 2014.
It wasn't showing on the bar taps and I had to ask if they had it, the barman kindly took pity on this poor limey and served me a freshly tapped pint.
I was working in San Diego and at that point in my homebrewing journey it was like I died and gone to beer heaven!
Ballast point, Stone, Green Flash, Russian River,Lightning ,Alpine breweries to name a few.

Have a great time in Florida! I recommend SD , fantastic mexican food,weather and beer if you get the opportunity thumb.

The west coast is definitely on my bucket list, and that trip will include a couple of days in Santa Rosa. Mrs70 is well aware of why!
I’ve got all of the glorious offerings of Yuenling and Cigar City to look forward to plus whatever is available from the many local small outfits.
I’m beyond excited.

I feel a warm regard for Mrs70 and all the other supportive and understanding partners that put up with our obsession. 👏😂

To be fair, she has a lot to put up with😂. I’ve discovered that if I constantly have a German lager on tap I can just about get away with anything home brew related!

You should name that lager Achilles Helles or maybe just after your wife as a mark of appreciation and respect (that should do it! 😂)

No, thank god, or I’d be rumbled, and Achilles Helles had to be the best beer name ever👏👏. Have a cigar!
 
Czech pils, it's tasting quite sweet today for some reason. Maybe the Dinge's aromatic is kicking in? It's a good easy drinker and not nearly as bitter as I was aiming for.

The Pilsner I just made I calculated the hops using the SMPH scale which gave me 50 IBU on the Tinseth scale it was 61 IBU that is if I am using the scale correctly.

Is that a sour dough starter you are using for the pizza dough? And if so do you reckon it makes a major difference to the flavour of the pizza vs dried yeast (I keep on thinking about trying this for my pizzas but to date have being lazy and stuck with dried yeast).

My go to is a 24hr prove with a sourdough starter. This one however is with dried yeast, I’d given my starter a big feed earlier in the day to see it through the next two weeks and forgot to save some of the excess.
Sourdough is definitely tastier, but you can get close to the sourdough flavour with a pre-ferment and a long slow prove. Prolonging proving time seems equates to equate to improved flavour.
I’ve done both poolish and biga’s before and both worked very well. The biga is a bit of a hassle, it’s got a tendency to dry out as the hydration is so low, but poolish’s are dead easy.
