Belgian pale could be the last for this evening

Thought I was opening a guest stout, but it turned out to be a lost bottle of Irish Red V1. The only thing wrong with it is the Windsor yeast. I was a bit heavy handed with the roasted barley on this one but I’m liking the toasted flavours a lot. Fuggles is definitely the right hop. V2.1 is going into keg on Sunday. It has more caramel malt, less roasted and EKG.
I think I’ve got V3 sorted in my head for LAB in May, WLP004, more roasted and less caramel malt, fuggles, 40+ points beckons, woo hoo!

Now I’ve finished it, I’ve gone full circle on Irish Red V1. It was brewed last June. The Windsor yeast led to a high FG and delivered a great body and mouthfeel. V3 is getting mashed in the high 60s. I’ll still go with WLP004 but run the fermentation in the low 20’s to allow it to express some esters.
Having a wheat beer now, I’m in wheat sweet clovey heaven. I’m loving the bottled version of this brew so much more than the kegged version, god rest it’s soul.
