@LisaMC or do what I often do, and pour into a large (2 litre) measuring jug. You get a jug three-quarters full of foam? So what. Simply wait five minutes, it will all calm down, and you will be able to pour into a glass comfortably.
I mean really cold - like in the freezer until it’s (almost!) frozen
Has it got much headspace in the bottles?
When I say ‘tickle the cap open’ I mean just lift a tiny bit of the cap (e.g. with a pair of long nosed pliers) so there’s a tiny path for the gas to hiss out slowly without removing the whole cap

I wasn't ready but has potential. Directors always had (I haven't drunk it for years) a dry, back of mouth taste to it. I rather liked that and the home brew version has that hint to it. Whether the brew will remind me of my Courage drinking days in Stockwell or not, it promises to be a decent drop which is just fine by me.Might crack one of my Directors tonight. It won't be ready, it's only been in the bottle a week, but I'm curious to see how it pans out.
What was the final gravity? The saison yeast should finish really low so it it didn't then the explosion is due to it still fermenting.the one I opened today has been chilled for a full week and still the same story. It’s hopeless lol. We have tried opening and leaving but we’d be here all week honestly and it’d be warm by the time it was pourable.
