I honestly don’t know much about them either and rarely if ever seem to see commercial Saison here in the UK, though it’s certainly true that the yeast seems to eat everything (97.7% attenuation on my most recent batch that came in at 1.001) using Belle Saison. As for if it’s hard to get rid of I must admit after hearing a few horror stories of batches being contaminated by Saison yeast I have made a point of taking extra care to clean out my fermentor afterwards but I’ve used the same fermentor afterwards without issue.I'm ashamed to say that I know nothing about saison. I've never seen it on the shelves in the supermarkets, I guess it's a regional thing, and I've been reluctant to make it as I've heard that one of the yeast strains in it eats everything in its path and is extremely hard to get rid of (S. Diastaticus) or is this a myth?
If you like the style they make for fantastic beers and are really easy to make.
