Regarding the Crystal malt and the final beer colour it is very likely that your malt was too dark. Any flavour difference in the maltiness that you can spot?

Fuller's stopped pasteurising their bottles. They are only filtered nowadays, which makes the flavour much closer to the cask version. You could still have an oxidised bottle, of course.

switched this time from CaSO4 to Gypsum so it finishes drier
CaSO4 is Gypsum, so maybe you mean something else?

Yeah, I was aiming for the cask version so perhaps I need to take wander to the pub. It's a hard life.

Honestly no, nothing that leapt out at me. That said I don't think I have the best palate, I'm always surprised for instance when I send pale ales into forum competitions and people tell me what hop flavours they're picking up.
