The instructions on my wine kit says I should ferment at around 20-25 degrees. I have mine in a cellar and temp at the moment is hovering between 18-20 degrees. Will that be ok? Understand it will prob take a bit longer but reluctant to move it if it's not absolutely necessary as it's an ideal place and not really got any other suitable options.

Thanks
Ian

Last winter my kitchen got down to 15c and was at 20c when the heating was on, all my wine finished.
Obviously 15 c is a bit low but as the temperature fluctuates it doesn't do any harm.

Excellent, thanks for the replies. I've moved it to the other end of my cellar closer to where my boiler is, don't think it's much warmer but poss a little. Will leave it now to get on and do it's thing...... Got a demi john of Rose on now as well and about to make up another 23ltr kit after dinner... Think I might have re-caught the bug

Also have a question in temperature. ...

My wines are clearing/ageing/maturing respectively in the garage. I have no place in the house such as cellar or anywhere cooler. We're blessed with mild weather currently but I wondered if the garage is still going to be an ok place come winter temperatures? Can they be stored 'too cold'?

You have to get well under 0 to freeze anything with appreciable alcohol content.
You can get a haze from the cold, but it goes when the stuff warms up again.
Whether it affects taste or maturing chemistry, can't say

Yeah, my concern was would low temperature effect the taste and or look . Might cover them if we get very cold...
