Strong Fruit Cider

Got my cider on the go today, similar recipe to Laurin but with some additions of my own as follows:

Ingredients:

8 litres 100% apple juice
2 litres 100% orange, mango and passion fruit juice
2 litres 100% red grape juice
900g (2xbags) frozen mixed fruits
227g pure clear honey
300g glucose

brought all of the above to the boil and simmered for 10 minutes or so then put into a 23 litre FV. Then added:

25g of Malic Acid
1 large very strong mug of tea (two tea bags steeped for about 15 minutes.

I left the FV to cool until it was at 20c (that took about 9 hours!) and took hydro reading OG 1.058 then added:

5g of cider yeast
4 teaspoons of Pectolase
2 teaspoons of yeast nutrient

It smells pretty good and with an OG of 1.058 it should have a fair old kick to it aswell :) will let you all know how I get on :cheers:

Sounds good I think mine could have definitely used some malic acid.
 
True I might add it when I serve it as it as all bottled and nicely carbonised. I had a little bit before and served it with a shot of lemonade etc.
 
No you need to add it before bottling it will make it too sharp if you just add before serving with out maturing. It is the maturation process which is important if you are using malic acid.
 
I guess then I will stick to lemonade, because its all bottled already.
