Please forgive me for mentioning Xmas in August but I love it and think about it all year round.

I like wine and I love Christmas and wondered if anyone had any good Christmas wine recipes?

Even if it has to wait until Christmas 2016 or 2017 (or even longer) I would love to have a special wine to make for Christmas. I would like to have some wines I can put down and forget about for years.

Something nice and spicy perhaps, ideally it would be a red wine to sit by the fire with on a cold winter night.

I’m also thinking of producing a mead for Xmas with cloves or something in it.

I’m not really looking for a mulled wine recipe but if you have a good one of those too I might be interested in trying it.

Any and all suggestions welcome.
 
Christmas Pudding Wine.

Ingredients.

1 x 900 g 2lb Christmas pudding
1 x 411 g tinned peaches
3 x small oranges (juice only)
2 x 1 litre cartons of white grape juice
500 g bag of mixed dried fruit
1000 g 2 lb sugar ( not fixed) to SG 1.130 approx (after 24hrs)

2 tsp of pectolase
1 tsp pf Bentonite
1 Vitamin B1 tablet (crushed)
1 1/2 tsp yeast nutrient
1 camden tablet (crushed) or 5ml sulphite solution
1/2 tsp of potassium sorbate (stabaliser/ yeast stopper)
1 pkt of Gervin GV4 high alcohol yeast (purple label)

Sounds REALLY good thanks - hope pundshop sells vitamin B1 tablets unless I make 30 batches these could be wasted :)

We always Have xmas pudding going spare every year.

Here's a question - how much sulphite powder goes into the 5ml solution? I have wondered this for a little while, how much of the dry powder (I have Sodium Metabisulphite) is equal to 1 camden tablet?

I have since read that 1/16th of a teaspoon equals one campden tablet. Now where its my 1/16th of a teaspoon measure? Oh here it is on the dining table in the doll's house!!! lol
