Just another update:

All of the nutrients are now in. The fermentation seems to be going a bit faster than expected, I was wondering if anybody could help explain?

Regarding some of the dates:
  • 5th - 1.11G(Using manual hydrometer) Sanitized and added water/honey
  • 6th - 1.1063G Added Yeast
  • 13th - 1.0322G

On my RAPT Pill graph it is showing 11.34% alcohol already.... That seems a lot quicker than i was expecting and i still have some sugars left? I was only expecting this mead to go to 10-11% with the online calculator i used (https://www.meadmakr.com/batch-buildr/)

I was originally wanting it to run dry and then back sweeten with some non-fermentable sugars, but i dont think i want something as strong as like 15%?

I was thinking i could get it down to around 1.01 - 1.02 and then add some potassium metabisulfate + potassium sorbate to stop the yeast taking it fully dry? I was originally planning on adding it anyway before flavouring it with the fruits

There has been no off-smells or sulfur smells from it apart from a very mild sulfur smell before i added the first nutrient drop which went away very shortly afterwards. I havnt tried tasting it yet.

It seems a bit cloudier now, is this normal? Im guessing its the yeast + nutrients that will eventually fall?

EDIT: Just noticed after posting... on the meadmakr calculator it says 1.083OG and i had 1.1063OG, I am guessing that is where the gravity discrepency is. I am guessing my honey was a slightly different consistency to the calculator estimations.
