Anyone have any views on the following.
I'm breiwing a quad, have hit final gravity after just under 2 weeks and transfered from my stainless steel fermenter into a fermzilla (which I have not used before until now)
It is under pressure now without an airlock.
It occured to me that this might not actually be a good thing. I don't want to subdue the esters. However, maybe all of the ester production has already been done in primary and it doesn't really matter now. Any views on this ? Thanks
