Hi i have recently set off my seccond AG with us-05 yeast it has been fermenting for about 14days and still has a thick crust about 3" on top with no sign of it falling yet not so much a problem but it is taking a lot longer than the s-04 i am used to. i was wondering what your thoughts and experiences were on this yeast strain regarding times it takes cheers in advance

What's the gravity at the moment, and what's the temperature of your brew?

I find that US-05 is a fairly poor flocculator. It needs some help to drop out. I fyou can cool the FV down as much as possible for a few days, that should help. Fining, either in the keg or secondary will also help.

Mick, Hi, Is it Tony's SNPA your brewing for the bottle swap? :grin: Im interested in your post also :thumb: My SNPA has only been in the primary FV for about 6 days & Iv used US-05 also for the 1st time. Still got a thick krausen head & bubbling away. I was going to wait till it stops, then transfer. I have heard it takes time to cleer :roll: . I was not planning to use finings, just leaving in the secondary for a few weeks to clear :wha: cooling it down to help things along. So im interested in any thoughts aswell. :cheers:

I'm glad that this post has been created...as I am terrible problems with my SNPA :cry: which I made 17 days ago :eek:

After 7 days..it appreared to have stopped fermenting and when I tested it was 1012 ! I crashed cooled it to 5 degrees and left it in the primary for 5 days then I added Isinglass. After 5 days...I checked it .and it was perfectly clear :D

I raised the temp to 13 degrees... ready to bottle it on Saturday (day 14) and to my horor..I saw that it had a half an inch of yeast top..and when I took a sample..it was cloudy and fermenting :oops:

My FV..is not airtight....due to having SS Chiller inside....My fear now is that it may get oxidised :cry:

I sampled some tonight and its really bitter (not sure if this has anything to do with it going wrong :whistle: )

My plan now to save it ..if I can :hmm: ....To crash cool to 5 degrees then rack to a corny....I will bottle a few to take to Ilkley (for a second opinion) ...Not sure if I dare send any to those I promised.... :oops: :oops:

Anyone suggest anything else ..(Aleman) :whistle:
 
I racked mine into secondary after 7 days as I thought it had stopped - it hadn't and went on for another 6 (13 days in total). Checked the gravity then and it read the same for 2 days so I bottled it.
It tasted wonderful - bitter, but as it should really. It wasn't totally clear at the time of bottling but most of the way there - hopefully it will clear fully in the bottle.

I've heard all these things about US-05 before and to be honest, that's why I've never bothered with it... but if it gives beers of this sort of quality, then I may well persevere :D

All seems well really but I do think that sometimes we're spoiled with S-04 as it's so well behaved!
 
Thanks Tony for your reply!! Think I will buy 25 Litre FV with an airlock as a seconary! Then I won't be worried about leaving it to get infections ;)
I'm going to make another brew - Using less crystal in my recipe as it's a bit darker than the real thing! Might also hold back on the bitter hops too :hmm:
 
I really like US-05 but also find it can be a pain in the arse... I leave in primary for 14 days before I even look at it, find it attenuates really well but always needs fining to get it to drop clear ( I use gelatine which works fine with it).

The first time I used it I left an IPA without fining, as I intended to condition it for at least 3 months. After 4 months it was still a bit cloudy and remained so all the way to the last pint... was bloody lovely though !! :thumb:

hi Brewmarc unfortunatly its not the SNPA i am awaiting a delivery of hops and hn i shall havee that underway(massive delay i know :oops: ) i moved my FV today and when i put it down (with a shlight thud) big chunks of the us-05 started to fall to the bottom :D :D i took a sample and it has brewed down to 1010 :D so hopefully the rest will drop soon and i can get in seccondry with finings. now on to the SNPA cheers :drink:

Dont worry about the delay in brewing the SNPA :nono: Im a bit late also :oops: After all; homebrewing is suposed to be fun :party: so no pressure. Ill PM you when :pray: :pray: my brew is ready & ill send you one aswell :thumb: :cheers: I have always adhered to Charlie Papazian's catchphrase "Relax, don't worry, have a homebrew" & once you'v had a few homebrews it makes even more sense :lol: Im just going to leave mine well alone untill its finished & rack it to secondary.
 
Cheers brewmarc your a gent. i reckon that book would have been about 40 pages shorter if you omited all the "don't worry have a homebrew" lines :rofl:

:lol: :lol: How true! but both his books are bloody fantastic :thumb: I started homebrewing with CJJ Berry, relevent at the time but a bit dated now :geek: Just a point about us-05 & floculation :ugeek: Just cracked a bottle of the real stuff SNPA (for reserch purposes of course :geek: :drink: :drink:) & it is cloudy with the yeast & fairly hoppy with a bitter (not overly) finish, :drink: so Im not aiming for crystal cleer :nono: Will be quite happy if i can drink it :lol:

Absolutely - never a truer word spoken! If it ain't fun, don't do it!

And talking of impatience (were we, or was that another post? I'm - eternally - confused!), I couldn't wait any longer, I cracked open a bottle (which is all of 3 days old).. and it is gorgeous... can't recommend this enough! Hopefully it will continue to improve!

Im pretty new to it though i have grown up around it with uncles brewing kits and maybe an extract or two. AG is definitley the way forward thoough :D Just managed to source the Pearle i was having trouble with so the SNPA will hopefuly be done and tucked away before i go offshore again next week :drink: cheers gonna go "sample" some brews now

Brewed my beer yesterday with safale us-05 yeast, first time I have used it. Only a very thin crust has appeared on top of the wort (soon to be beer) in the fermentor. Does this not generate a bubbly/fluffy foam? Should I be concerned.
