Ribena wine MK2

I'm going to give this a go in a couple of days, once my WOW is bottled this will be able to take its place :D


1L Pressed White Grape Juice
2L Ribena
800g Sugar
1tsp Pectolase
0.5tsp Tannin
1tsp Glycerine
1tsp Youngs Super Wine Yeast
1tsp Nutrient
2L water

Mix tannin in with sugar while dry
Boil 0.5L water, take off the boil dissolve sugar & tannin into it
Leave syrup to the side to cool a little
Pour juice into clean sterilised DJ
Add Sugar mix, Glycerine and top up to the shoulder with clean water
Give it a good shake
Add yeast, yeast nutrient and pectolase
Give it another good shake
Bung and airlock it
Top up to the neck once the peak fermentation is past

Job done :D

1 litre cranberry juice drink
800g sugar
Extras as a WOW
Ferment for 1 week, top up DJ with 250ml Ribena

Total sugar is 1162g, OG approx 1.085 based on 5L. If it drops to 0.995 I'll see 11.4%. I just really fancy using the ribena :D

What's making you think it'll have such a high OG?

You're making it worse, you've got the "no added sugar" Ribena which is loaded with artificial sweeteners, so your brew is going to be super-sweet even if you think it has fermented out.

There's somewhere between 550 and 600g of sugar in a litre of the correct Ribena.

Ahh, you're thinking of the concentrate with all the preservatives and other ****. I'm using straight ribena with no added anythings and not concentrated. 105g sugar per litre.

Ok, that's a Ribena drink in a carton, it's mostly water.

I don't have a blackcurrant Ribena in the house but I found a strawberry one, their labels quote sugar "per diluted serving" and a serving is 1 part cordial, 4 parts water, so a 250ml serving represents 50ml of cordial, multiply that number by 20 to get sugar in the litre, which in the case of strawberry Ribena is 27.3g/serving x 20 = 546g sugar in the litre of concentrate.

If your litre of drink contains 200ml of cordial, your sugar calculations now make sense.

I didn't go that far lol. I just looked up the nutritional values on the Asda website for the carton. 10.5g per 100ml sugar... job done :D

I might be wrong but I think you may have the way ribena is sold back to front. The cartons aren't just pre-diluted cordial, they are fresh from concentrate.... exactly the same as the OJ and Apple Juices that we all use. The cordials are a different beast in that they have loads of additives to the concentrate to make the cordial. I didn't fancy boiling off all the flavour so decided to stick with the fresh stuff.
 
I haven't seen those cartons, or rather if I have I've never picked one up to read the ingredients, but if they are ready to drink that would still explain the sugar content.

If they are free from preservatives, so much the better :thumb:

Yeah it definitely looks the part. Did the link I put for asda not work? Asda site has some funny ways of linking so I wasn't sure.

Anyway....

Ingredients
Water , Sugar , Blackcurrant Juice from Concentrate (6%) , Vitamin C , Citric Acid


I thought it was maybe too good to be true so I wanted to make 100% sure, I wandered over to the Ribena website and true enough... no artificial anythings are in it. It's the exact same stuff that's in the smaller 200ml cartons (previously 250ml).

I'm looking forward to trying it :drink: :D :thumb:

I hope you can now understand my horrors at the thought of you using 2 litres of cordial.


Although I have used Ribenas in the past I always went easy on the blackcurrant, but I haven't used theirs since somebody pointed us to the preservative free Polish syrups.

Would have made cheap fuel though :wha:

I don't suppose you have any idea what the on the rocks kits use for their ciders do you? The flavour in 23L from a tiny little sachet/pouch of liquid is just unbelievable. I'd love to be able to add a little flavour to my ciders and wines but I haven't found anything even nearly as potent as those pouches.
 
Made this yesterday and it's now fermenting away like a champ. Just did exactly what I wrote above. If I was doing it again I would make sure the juice had a couple of hours in the fridge as I had to dunk the lot in the bath to chill it before pitching the yeast due to the water/sugar/tannin being boiling. Having the juice in the fridge would have meant I could pitch straight away.

Hopefully it'll turn out nice :)

You're probably adding a bit too much juice. Most WOW style wines only use approx 2L of juice per gallon. The reason I went for 3 with the above was for a bit more body/flavour due to it being a rose I thought I could get away with it. I did exactly what you have put only I added approx 1.5L of bottled water (I don't trust my tap water).
 
Ah ok so what effect does it have using too much juice?

I've done a good few homebrew beers but this is my first wine so new to all this.

Not sure, I've never done it. I can only imagine rather than having a light taste it will be a lot more overpowering. All the wine recipes I have seen contain between 2 and 3 litres of juice per 4.5L DJ :)
 
So how did yours turn out?

I think I might do both. I like to experiment a bit lol.

Not tried it yet :D

Still maturing in the DJ. I might bottle it next week and see what I'm left with :)
