I fermented a couple of batches of TC with belle saison yeast. Could I reuse that yeast to make beer?

Thanks.

No reason why not.

Belle Saison is rated as a beer yeast, so recovering it from the trub, washing it and making a yeast starter should be fine if you follow normal practice to prevent wild yeasts getting in there.

Also, Holland and Barrett have a "Buy One Get another for a Penny" offer on and their Malt Extract makes a great base for producing a yeast starter.

Enjoy.

Would it have difficulty eating the sugar in malt after it's now used to fructose?

Here's a photograph of "washed trub" as it is in the process of separating ...

The thin white line that you can see on top of the darker stuff at the bottom is a layer of "live" yeast cells. They are alive and therefore will start fermenting any available sugars.

When the yeast has separated and compacted in the bottom of the jar (leave it for 24 hours in the fridge) it is easy to pour off the cleared liquid at the top, scrape away the live yeast in the middle and make a "yeast starter" from it.

Enjoy!
