Recipe using up old ingredients - advice please

Hi All,

Tomorrow is brew day! My third all grain brew.

I'm using up some of my old ingredients so they don't go off and have come up with the below recipe which is basically a combination of the two previous brews. I'd appreciate some experienced eyes giving it the once over to tell me what I'm likely to get out the other end and make sure I'm not going to do anything silly.

Hoping to get 22l post boil.

Grain Bill (all in grams)

3250 Maris Otter
800 Standard Crystal
490 Torrefied Wheat
200 Flaked Maize

11 litres going into mash for 60mins

Boil (90 mins)

35g Challenger (6.92%)

Last 10 mins
Chinook 41g (12.4%)
Galena 26g (12%)
Irish Moss 3g

I'm using Nottingham Ale Yeast.

Other ingredients I have at my disposal but am not using (on top of the above):

1kg Maris Otter
465g Flaked Maize
35g Challenger Hops (6.92%)
85g Fuggles (5%)
920g Black Malt

Bit heavy on the crystal, unless that's what you're after. I wouldn't want to see more than 500g in a "normal" beer (dark ruby beers excluded.)

Otherwise, looks solid and I'm sure you'll be happy whatever you do :cheers:
 
Personally I'd drop crystal to about 200g and throw the TW in the bin ;)

Probably split the last hops between 10 mins and a steep as we'll, but it's all personal choice :thumb:

I'd 2nd that on the grains plus add more maris
 
So is 800 fine for a dark ruby beer or should I still drop it down and sub for Maris?

Well, to give you an idea, sarah hughes dark mild uses 1kg crystal. Its quite rich and cloying, full of flavour, but by no means excessive....just, well, more than usual.

Its really down to you but if you want to keep a balance, you probably dont want more than 500g.

I'm going to take the crystal down to 600 and add 200 of the Maris.
