I'm totally new to grain / mash brewing; i've loads of experience with Wine and Cider and thought I'd give a go at a few ales. I havent invested in loads of flashy new gear, but I've seen this basic guide about using a 2 gallon pot on the hob.

My question: when it comes to recipes, can I simply scale down the volumes / weights to something appropriate for my needs? I know this sounds really daft; but beers compared to wines are pretty intensive!

Yes, just use percentages to scale recipes. You will find beer recipe calculators on the internet that make this easy. I use Brewmate, which involves downloading a small program file.
 
Yes. I often make 19 litres and just alter the recipe accordingly.

I've made myself an EXCEL spread sheet with all the recipes I have found and once I put in my brew length it works everything out. I do double check just in case though!!
