This coming Sunday i'll be brewing my next ag hefeweizen.

I've went for Dingemans malts this time to see if they differ much from Weyermann malts.

2.7kg Dingemans wheat malt
2kg Dingemans pilsen malt
300g Carawheat

I'm going to try wlp300 on this brew. For the hops i forgot to order more hallertau so not sure if i have enough but i noticed in Alemans effin erdinger he used perle as the bittering hop. I have some in stock so i might use a little of that with the hallertau. This will be brewed using a biab step mash!

I was also toying with the idea of pitching colder than normal and raising the temp over a couple of days. Would it be best to make a starter if using this method? Or should i just pitch at 18 and ferment at 20?

Evening . Good call on the cara wheat , 1 of my fav cara malts . Perle is a great bittering hop for a hefe and using hersbrucker for your flavour hop is also idea with perle .
Also your grains are gonna give it a bit more malty to it which imo is very nice .

What will be your mash profile be ?

41oc-20mins
50oc-20mins
64oc-20mins
72oc-30mins

Any advice on pitching cool and heating up? Or should i just pitch as normal?
I think i'll make a starter for this one, it's something i want to try and get in the habit of doing!

Pitch colder 15c if wanted . Your mash , the first 2 are to enhance the flavour while the 3rd and 4th are to extract certain sugars but you need a longer mash time . I would do the last 1 for 50 mins . Starters are the way forward to get active viable yeast which gives a fast ferment finishing fully .

Just need to get on beersmith now and sort out my hop additions.
