Ok, i'm a stickler for Sunday traditional lunches/dinners (Roast and trimmings) but this Sunday I want to suprise the girls and make a pie instead of going the roast joint route. (I know not much of a change - but I did warn you).

I have two daughters (6 & 3) and my wife to consider so I'm thinking of just a nice chicken, leek, bacon & mushroom pie, but I'd be interested to hear everyone fave pie recipe!
 
Oh boy ......... you're into the realms of Mrs C's mastery here :clap:

she's a keen bakist / jam maker etc and has won many prizes both at the village show and recently the County Show :clap:

Her homemade pie ..........

Made with hot water crust pastry
from the bottom of the pie case
bottom layer pork fillet
2nd layer sausage meat, with added herbs
3nd layer celery and leek
4th layer chicken breast
top layer sausage meat

after its cooked and cooled it's filled with a 'jelly' stock which is allowed to set :thumb: :thumb: :thumb:

It really does go well with a good pint :drink:

or how about lanashire hotpot not quite a pie but it does have a crust

'tonly crust on mi 'ot pot is a thin layer of sliced 'taters :roll: :thumb:
 
For Kids you cannot beat a well made fish pie, made with fresh fish bits from a local fish mongers a a good dose of prawns, essential is some salmon, decent white fish such as cod and some natural smoked haddock.

Poach the fish in some milk take it out after a few mins, make a white sauce out of the milk add some fresh tarragon and parsley, put the fish back in along with some peas, & plenty of black pepper then top with some nice mashed spuds made from oven baked potatoes (not cheat baked spuds in the micro) pushed through a potato ricer, & top with plenty of mature chedder cheese, 25 mins in a hot oven & serve up with some baby courgettes and your on to a winner every time :thumb:

My kids love it and there only 2 and 5 respectively.

But if its red meat you want

A Proper steak and kidney pudding cannot be beaten, tis a bugger to make as it takes ages but its well worth it, and is even better with a few oysters chucked in for good measure, & I get fresh suet un-chopped from my butcher to make the pastry, none of that atora rubbish.

I have a good recipe for it, if you want it.

My old man does a similar pie for chrimbo made with a hot water crust, but fills it with duck rabbit pigeon venison etc filled with jelly stock, goes down great.
But he won't part with the recipe

I worked in a pie factory for 3 days MD, Never again I jacked it in told em I couldn't work for them :sick: .

:thumb: agreed and the same goes for most supermarket pies....
 
Mrs Snail makes the most wonderfull Pork Pie's.

She uses a Hand raised hot water crust pastry.
Streaky Bacon
Belly pork
salt/pepper
Sage
mace
all spice berrys
and the all important jelly.

Now I dont know how she doe's it as she is a vegie but they are amazing and with chips and mushy peas fantastic.
 
I don't care I was only joking anyway. I work in food trailers I know how your meat is transported. I wouldn't eat meat from a supermarket or anything that was not killed locally. But If we all knew what each other knows we'd eat nothing or do nothing, So I still buy them :lol:

That sounds a great pie but skip the salmon unless it is wild. As I have said before I worked on a salmon farm and I wouldn't eat salmon end of :nono: :nono: , you may as well go to the doctors for a massive dose of antibiotics and swim in a tub of sheep dip, oh and eat a few batteries for the heavy metals that is found in the stuff. And that is before all the welfare issues.

My favourite pie would be a steak and stout pie preferably my elderberry stout or stout and some port just to sweeten it back a bit. YUM YUM. Puff pastry top and served with courgettes broccoli and carrots.

Ye cannie beat a greggs scotch pie.... an' ah dinnie care whits in it as long as it tastes guid! :D
