Mincemeat wine/sparkle

I've done the mincemeat wine form the forum and its on 10% which I thinks good for a sparkling drink. When I rack will it get stronger when I prime it. It still bubbling like every 3 secs
 
Hmmmm. I havent tried it before a year of maturation. So I cant comment on that. I dont think it would be possiable.
But it does say in the description of the recipe:

"This wine has also taken a highly commended for me at the National 2008 at a mere 4 week old"

So depending on the fermentation time, but it would be a risky one. If its not right at Christmas. You could stash it away for a nice surprise next year! ;)
