Well, isn't that one of the theories as to how wine was discovered? A mixture of the yeasts on the grape skins, and on the feet of the people treading the grapes? lol

Beer was just as fun though, with the yeast basically falling out of the air, and people thinking that it was their god doing it....

Serendipity is a beautiful thing...

The Candida one by the way is Aurland. The guy liked the beer so uses it anyway, pretty sure it's been mentioned here? Registry says it's not really a Kveik though with it been an unidentified strain from the Candida genus, rather than Saccharomyces cerevisiae.

Well I'll cross that one off my list then! ( I'm glad you brought that up)
Talk about Funk!
But the yeast didn't just fall out of the sky!, That's ridiculous, everyone knows Nephthys was the goddess of beer, surely?

The funny thing is, all of the ancient pagan religions had a god or goddess associated with beer and/or brewing... Those folks weren't stupid eh? lol

Don't be put off by Aurland not been Kveik and been Candida by the way, it sounds delicious by all accounts, and heh beer making fungus is beer making fungus at the end of the day.... lol

I received a vial of the Aurland last week but I’m having trouble growing it. I did the recommended 200ml starter but saw no activity within 48 hours so I tried to drop any yeast out by refrigerating. This didn’t really do anything but I pitched it all into another, slightly stronger starter last night and added a little nutrient. Still have no activity this morning.

With it being a different strain is the whole stepping up process the same or am I doing something wrong?

I'm guessing the stuff's been dormant for a good while, if it were me I'd just keep swirling the stuff if no stir plate, keep it warm and be patient. Keep at it for a few days.
This is the fungus stuff, right?
You can always pray to your pagan beer god of choice for good measure, I swear by goat sacrifices myself.

Hmmm, I've no experience with Candida yeasts (not with brewing anyway.... lmao I'm an ex nurse, and before that worked as a care assistant....), so no idea what sort of lag phase it might go though really. Just demonstrates another reason why it's not considered a Kveik though, as Kveik is supposed to rouse even from dry insanely quickly.

Or could just be it was DOA maybe.

He could always put his foot in it I suppose.

You have to hope that it's a different strain of Candida to those that cause athletes food or thrush you really do.... lol

Had another email from WHC, confirming that Lagertha is a Stranda Kveik, and that Ragnar is a Voss Kveik by the way (would be why those 2 sold out so quickly, as they're probably the best known strains thanks to Omega's Hothead, and the huge popularity of Voss). He's got Framgarden and Arset coming soon too! Looks like WHC might become the go to as a commercial source of Kveik at this rate.

I've just been refunded by an ebay seller selling Fermentum yeast, 'Out of stock', so You might be correct.
It was an impulse buy anyway.

I think the beer gods have been listening!

The starter has gone from this (Monday night)

How's the smell? So long as it's not smelling of tobacco, you should be ok I reckon (that wild infected wort I got smelled exactly like rubbed tobacco whilst fermenting!).

It smells fine, almost like traditional cider! Very pleasant!

I poured the spent starter into a glass and it tastes nice. I’d say it has a lot of apple / pear notes to it, with a little funk! Very nice!

I’ve got the yeast on the stir plate now. Looking forward to proper brew with it. Unsure on what hops to go with tho?

Sounds nice. I'd say almost any fruity hops would work with that to be honest, maybe a hint of spicy too? That's assuming you like fruity hops though.... lol I do, so would probably be throwing mosaic and citra at it. :beer1:
