Apart from the advantage of being able to brew in the summer, which for me is what got me interested in Kviek, the other upside is speed. I'm about to start a 3rd Kveik brew after 1 disaster and the second one that seems ok so far. I'm not in a rush to drink it so is there any disadvantage to leaving it in the FV for a couple weeks like you would a normal brew?

The longest I've left mine in the FV was a week, it bottle conditioned with dextrose fine.
