How much hops?!?

Hi, new brewer here but probably a amateur question but I want to make an extract 5 gallon brew, I want it to be hoppy as in brewdog punk ipa hoppy. Would I want to aim at about 250 grams of hops a lot of 2nd and 3rd editions??

Also been debating if it might be better to add the extract late in the boil but I'm not sure, anyone with any advice??

The Maltmiller sells a Punk IPA kit which makes 19 litres and uses this hop schedule:


50.00 g Chinook [13.40 %] - Boil 12.0 min
16.00 g Ahtanum [5.30 %] - Boil 5.0 min
16.00 g Nelson Sauvin [12.20 %] - Boil 5.0 min
16.00 g Simcoe [14.10 %] - Boil 5.0 min
16.00 g Ahtanum [5.30 %] Steep 0 min
16.00 g Nelson Sauvin [12.20 %] Steep 0 min
16.00 g Simcoe [14.10 %] - Steep 0 min
16.00 g Ahtanum [5.30 %] - Dry Hop 3-5 days
16.00 g Nelson Sauvin [12.20 %] - Dry Hop 3-5 days
16.00 g Simcoe [14.20 %] - Dry Hop 3-5 days

So around 200g total for 19 litres. For 23 litres that means about 235g total hops, so you are about right. The kit is geared to using up 4 x 100g packets for two 19L brews. Whether this equates to what Brewdog uses I've no idea, but people say it makes a good Punk ale.

Please forgive my ignorance, what does it mean steeping? Is that like at flame out as our Americans friends say?
 
Yes it means added after the boil has finished. Doing this at 80C avoids aroma evaporation and adding bitterness, so cool the wort down a bit first. Steep for 15-30 minutes then continue cooling.

Hmmm, i don't use a wort cooler Clibit and just leave the wort in the fermenter over night where it is cool enough in the morning. I could well get the temperature down to 80C though I reckon. I just had a Williams Brothers Joker IPA and it was delicious, honestly beautifully golden and the scent was like all fruity and pineapples! I gotta try and make an IPA although it seems that its a little different from the porters and stouts that I am used to.

Oh yeah joker IPA is really excellent. Had a bottle or so recently and it is a definite favourite now.

Just chuck the the hops in once the temp is down to 80C and then leave them in until you transfer the beer to the FV.

I do the same as you - no chill in the fermenter. just stir the wort a lot till it gets down to 80C
 
I don't have a chiller, I chill in the sink cos I only make 10 litres or so at a time. Stirring helps. The temp drops quickly at first and slows down a lot below 50C.
 
Have I missed something or is there no bittering hop addition here?

All the hops are late additions. If you look closely there are a huge amount of hops in there with some big powerful hops. Just the first addition alone, if you added it at say 60min rather than 12min gives about 90 IBU on its own!
 
Oh I see. Thanks - only just moving on from kits so still learning this stuff. Presume I'm looking for the % stated after the hop name? Is this the alpha acid rating?
