Hi all,

still a newbie to all grain brewing only have one batch under my belt, planning on next batch, I’m going to be making a smash with Marris otter and simcoe I have 60g of simcoe but I’m leaning towards buying another packet (100g), could anyone give an example of how to use these including dry hop? Cheers
 
I like Simcoe and use it a lot in combination with citrusy hops (Citra, Mosaic). It is very dank - I think it’s gives a kind of minty taste (but I know others suggest cat pee).

For a single hop pale at around 5ish%, I’d suggest bittering to about 40 IBU with 2/3 or so of that coming from a bittering charge at start of boil and the rest as a couple of hop burst additions at 15 and 5 minutes before end of boil. If the amount of hops you use is no issue, you could also look at adding all your boil hops at the hop burst stage, which might give you a more flavourful beer.

I’d then use a similar amount to my boil hops at flame out or as hop stand. Dry hop I’d go as high as 3g/L for 3 days before racking.

If I was looking at 23L batch, estimating Simcoe alpha at about 13%, my hop schedule might look a little like this:

Boil
60mins - 15g
15mins - 7g
5 mins - 7g

Flameout - 30g

Dry hop - 3 days - 70g

I’ve read some posts that say there is a cat pee taste really hope this isn’t the case 😬
 
some crop years do have that but your beer wont taste like that, 60g isnt a great deal, for about 40IBUs I think almost half will go in boil. I would maybe buy a 100g of another hop as it works well in tandem, it wont be a smash if thats your goal. I made a simcoe centennial combo once which turned out really nice. I think Verdant have a beer like that. If you buy 100g of another I would keep remainder of your simcoe for dry hop and split the other 100 with maybe 30g in whirlpool and remainder in dry hop will give you about a 100g dry hop which for 20l (Assuming thats your batch) is fine. I wouldnt go much over 8g per litre in a dry hop as a limit
