Help with two basic extract recipes

I’m having a go at two recipes, not keeping to any style guidelines, just want to make drinkable brews!

1
US05 yeast
Light DME 2.5kg
25g Cascade, flavour
75g Cascade, dry hop

2
M47 yeast
Light DME 2.5kg
25g Perle 20 min boil
25g Perle 10 min boil

Both to ~21 litres.

Also have some medium crystal, Munich and melanoidin malt that could be steeped and added but don’t know which ones and how much would work well.

Any help would be very much appreciated 👍
 
For brew 1
2500g DME
Steep at 65c for 30 minutes
100g Crystal
100g Munich
30 minutes boil
Hop additions as stated
OG 1043 FG 1008
ABV 4.5%
Personally I would brew to 19 litres which would give you 5.0%.

I’ve never used cascade hops before and wanted to really taste them but keep some balance.
