Depends on the apple variety, I once made some out of apple juice and it was like battery acid.

i like a real nice storng cider the last kit i done was well watery tasteing real didnt hit the edge the 23 litre went in a few days was soposed to be 5.6% i have had stornger calpol to be fair.

Firstly, I wouldn't be picking them yet as it is too early for this area. I picked them when they start to fall naturally.

Last year I picked probably 80lb of apples, I cut them into pieces and put them in the blender to turn them into apple puree and then made a homemade press to turn the pulp into a cheese which went in the garden waste bin with a bucket to collect the juice. After collecting the juice I put it through a straining bag to remove any more bits before boiling the juice to deal with any nasties that were lurking in it.

I transferred it to demi johns and once properly cooled put the yeast in and left it to ferment out to dry.

It is slightly sharp but very good, even now (yes I still have a few bottles that have matured for nearly a year).

was thinking of useing alcotec turbo cider yeast shaw i read it was 16% or something silly,
as far as apples ready i have looked at a few of the apple trees on the alotment and most are not done or realy bitter. this one i got mine from where perfect and taste nice. there nice and small. with a real smoth taste. thats why i wan to give it a go. do i add any water or just ppure apple extract ??
