Have a 'Range ' white wine kit on the go.
After 9 days fermentation had slowed dramatically so I de-gassed, added the finings and back sweetend as instructed .
It would appear that fermentation has started again !
The brew still appears orange in colour though this may be as there seems to be many small bubble on the surface & I have never attempted to do 25 litres before, else it maybe simply that it isn't clearing. Hydro suggests fermentation should have been at the end when I added the finings and extra sugar..

Is it worth drawing some from the middle of the vessel.

If you added the stabiliser it should not have started fermenting again, what reading did you get?
 
If this was before you added the sugar to back sweeten it had probably not finished fermenting it should have reached 995 or below, my Range Rosé wines have got down to 992.

If your instructions are the same as mine and say what is in the quote below you may find the wine is very sweet.

The instructions tell you to add 750g of sugar to back sweeten after you have stabilised and degassed it, i decided to leave it dry as Mrs Tea doesn't like sweet wine and i am glad i did it would have been sickly sweet if i had followed the instructions.
 
The instructions suggested adding 150g of sugar to bring it in line with commercial wines.
 
It is definitely still fermenting.
Is there anything I can do to save the batch ?
 
How long since you added the stabiliser and finings? Have you moved it to a cooler place?
It seems to me that you just have to wait, if necessary let it ferment out, take a hydrometer reading now and leave it for a week then take another reading, if it is down to something like 0.990 then it's done, as you've already added finings it should clear, if it's already cleared it's done. I have done about twenty of the Range kits and they do work. So don't panic, I'm sure it's OK.

Well having let it ferment out completely this time I again added stabilizer & finnings as per the instructions. No more additional fermentation this time & the batch is clearing nicely.:thumb:
