You need to degas the Cider if you wanrt to get rid of the fizz, you can either shake the DJ then release your hand and let the CO2 out and repeat several times or you can use a wand - http://www.thehomebrewforum.co.uk/showthread.php?t=48971

No, the cider is perfect it's the wine that has a slight fizz.
