Hi I have had an extract brew in the fv since last thursday. It started of at 1052 and has been stuck at 1015 for the last two days. It is being kept at a constant temp of 19c. There is still a bit of bubbling in the beer but since it has never bubbled through the air lock (must have a leek) i have not been able to judge how slow it is going.

I am planning on giving it a diacetyl rest for a few days before racking to secondary for a week.

Do you think it is done or will I get a few more points out of it? i was hoping it would drop to 1010.

Any thoughts anyone

Cheers

It would be fine to transfer to secondary now, you may also get it down a few more pints during secondary fermentation.

I think i will rack into secondary tomorrow and take it off the heat. It will probably drop to 15 or 16 c in my workshop ( nice and cool in this hot weather mind you in winter -2c)

Cheers

I've had several stop at 1.015 and whilst I was initially worried that I would end up with a beer that wasn't as strong as I'd planned and also sweeter than planned my fears were unfounded. Yes, it was a point or two off of the ABV that I had anticipated but it also had lots of body without being sweet. People place too much emphasis on getting down to very low FG's, a low FG often results in a strong but 'thin' beer. Without doubt my best beers have been those that ended at 1.012 - 1.016 and it's what I always aim for now.

Thanks for that Parva. That has reassured me. It isn't to sweet and still has quite a bit of body so at the end of the day it should be all about how the beer tastes and not about getting the maximum alcohol out of the beer at the expense of flavour.

Thanks once again everyone
