Harvesting and drying Angelica roots

Dried Angelica roots are used, along with Juniper berries, in making gin.

Does anyone know when and how best to harvest, and how to dry the roots.
I believe it's harvested, once the mature biennial plant finishes flowering?
 
Cultivated or wild? The two are different and the "wild" one is considered by some to be inferior; though that is most likely snobbery! Do be aware:
Under the Wildlife and Countryside Act 1981, it is unlawful to uproot any wild plant without permission from the landowner or occupier.
 
Maybe cultivated has been bred to give larger roots. Guess cultivated and wild wont taste hugely different, though with Strawberries the small alpine 'wild' varieties have much more intense flavour than bloated, long shelf life, shop ones.
After flowering, a biennial dies. Seems daft to have laws forcing food waste.
