Just getting round to introducing myself, a toddler and a newborn getting in the way of my brewing!
Just started brewing at Christmas, first was the youngs american pale ale as per the instructions, it turned it really nice until it got to around 8 weeks old, I think my use of bleach as a sanitiser may have been to blame.
The second was the same kit but because I'm a smart*ss I thought I'd boil some of the extraxt with some centennials for extra hoppiness. Turned out not bad but quite tanniny. Also quite flat.
I then done a On the rocks, raspberry and lime cider and it's conditioning away quite happily and very tasty. However it seems quite flat as well.
After that I done a coopers mexican cerveza and it's only been conditioning for 2 weeks. I did have quite a few of them at the weekend though and found them a tad flat as well. I can also vaguely taste the cider from it as well even though everything was well washed and starsanned.
So I got myself a fermenting bucket, stuck another cerveza in and am going to transfer it to the coopers for priming and bottling to see if it tastes any less cidery.
