I wondered if anybody has brewed any successful German style brews using dry yeast.
I plan to have some all grain kits made up this week and looking through Greg Hughes 'Home Brew Beer' I can see a lot of German beers I like the look of but no dry alternatives to the yeast he is using.

I am doing his Raspberry Wheat Beer using Danstar Munich Dry Wheat Yeast.
I have so far done five all grain brews and I want to do five more before I venture into the wet stuff.

There are plenty of dry wheat beer yeasts and k97 is meant to be decent for alt or kolsch.

Have done two brews with the 'Crossmyloof' Kolsch yeast,came out nice. Are they a German beer!,don't know, don't drink German beers really.
Will be doing another couple later in the year.:)
 
Had success with Mangrove Jack's M84 dry yeast making a Bavarian lager and then used the trub from that to do an Austrian dark lager. They both ended with a really low FG and turned out fine.
 
S-34/70 is a great dry German lager yeast. I made an alt with K-97 that turned out pretty good.
If you can find it, S-189, while not a German lager yeast, does real good in maltier styles.

For a Malty style i use Oktoberfest Marzen yeast WLP820 from White labs its not cheap but perfect for the job. it does not leave too dry a finish it can be harvested and used a few times , i just turn it straight round has i take one batch off i have another batch ready for the yeast cake to go into.:thumb:
