Fermenting question

Hi all

I am currently making a Muntons Lager, and its been sat in my FV for a week and a half, unfortunately due to work commitments i will not be home now until next Friday so will have to bottle it then. This will be 3 weeks its been sat in the FV, will this still be ok?? it is all secure , ie airlock etc and there is no way any nasties can get in.

Hi Chris,

Well I am about to use a cornie keg for the first time with a lager and this involves fully fermenting in one bucket, then adding finnings and transfering to another bucket with an air lock and leaning it until fully clear - This will probably take a couple of weeks - total time probably just over 3 weeks before the beer is keged - So providing the air is kept out I can't see any reason why you should not be ok - the yeast will still be alive, just dormant.
 
Best practice is often read to be no longer than two weeks, however I can tell you from personal experience that I've gotten away with a month. In fact I asked the same question a while ago and a much more experienced brewer than me advised that it would actually do the beer more good than harm.
