Hi

I am new to the idea of home brewing so if I offend with this post, forgive.

I have tried a batch of Elderflower Beer - a simple recipe but one that calls for a slice of rye bread to be added to the bin before bottling (leave it in the bin for a few days). I have gone to the bin today to bottle the beer and found that the bread is moldy - is this normal (I didn't think so but thought I would check).

Is it mould, or is it the yeast culture growing on the bread? Elderflowers will produce wild yeast in abundance IIRC (it's been a long time) and the bread might be to attract the yeast away from the brew.
