this is only my second attempt at a home brew, the first was a Coopers Australian lager which came out fine,
mixed as the instructions and OG was 1042 which i think is about right
this brew the Mexican Cerveza came out at OG 1030, way too low, i even only made 20 liters as i heard it would give it more body!
i mixed it well enought, the only thing i can think of is i used 1kg of brewing sugar instead of the brew enhancer Cooper's recommend,
i just made it today but can anything be done to improve what i think is going to be a disaster! can i add sugar or anything else to it,
i was thinking of dissolving a cup or 2 of sugar and adding it, but not sure if this will work i dont want to totally wreck the fermentation
anyway any help appreciated

I wouldnt say that it will be a disaster. First of all check that your hydrometer is correct. I think you check it in water that is 20c and should read 1000 (Im also quite new to brewing) If so then all you can do is add additional sugar. I think when I made the cooper mexican cerveza its og was about 1035. If your sticking to the can kits I would recommend the coopers canadian blonde its lovely

thanks for the reply, hydrometer is correct, think i will add some sugar or maybe half a pack of the coopers brew enhancer i should have used,
might try the canadian blonde next or i was thinking about the Geordie lager

While doing kits I never once got the right OG reading... No matter how much I mixed...

Theres no need to add anything else, for whatever reason you just havnt got an accurate reading, if you have added 1kg of brewing sugar then theres plenty in there, it will turn out around 4-4.5% i would imagine maybe a little more as you brewed it short.
