Have brewed the coopers irish stout to instructions before, that is with 500g light malt extract and 300g of sugar and it was very good.

For my next attempt i was thinking of adding all dme and leaving out the sugar, maybe use 500g of extra dark dme and 300g of light dme.

All agree this would be good or would the extra dark dme be a bit overpowering? I do like a nice full bodied malty stout?
 
Not done the Irish stout but I have done the standard coppers stout using DME. Biggest problem I had was it fermented like crazy at first and overspilled my fv. It tasted great but I've since done it with half DME and half dextrose and found it was still very good but without the eruption of foam. I don't know if you will have the same problems with the Coppers Irish stout but would advise fermenting it somewhere that it can't do any damage to carpets etc if it overflows
 
I brewed this up last Friday with 1KG of dark spraymalt, a 450g tin of black treacle and about 100g demarara sugar.

OG: 1.050

Brewed it short to about 20 litres. Ferment was pretty crazy but didn't blow the lid or anything. Just left it caked in sticky black goo. See the Coopers Irish Stout kit review thread for others experiences.
