Champagne yeast for Ginger beer??

Hi all

I'm going to make up a batch of this 'fiery ginger beer' I've been reading the discussions - it looks and sounds good.

Only thing is -why does the recipe call for for champagne yeast? and would I get away with using some Safale S04?
(I've got a packet left over from my last batch of beer)

the only reason for calling for champagne yeast would be to get it ferment down lower and drier is my guesse
and the ale yeast should be ok but wont be the same as published recipie . but its your brew so try it you may prefer it
and you can allways try the champagne yeast another time
 
I think I will try this with a standard youngs wine yeast, will this be OK regarding carbonation ?
