I have had this in the demijohn now for 3-4 weeks and it is still fermenting away like a good one, starting SG 1054 and today the SG 1010. The temperature is 20 C. Should I just let it keep going until it completes it's process. It tastes ok .

I haven't brewed since the 1980's and got a real surprise when I discovered that this kit only produced 1 gallon, a lot of effort for required, so don't want this one to go to waste.

In the meantime I did a Coopers IPA, which is now bottled and in my cellar.

I had the same issue with a Woodfordes Admiral's Reserve and had a helpful reply when I asked about it here - see this thread. I went ahead and bottled yesterday evening even though the airlock was still bubbling (not very vigorously, one bubble every few minutes). My FG was down to 1005 as best I could tell from a very similar OG to you (1055). It certainly smelt pretty potent when I opened the FV!

Thanks Michael, I will give it another couple of days , check the FG and I think it's going to be a strong one too.
