Right I fancy making a big american/australian fusion style IPA therefore this is going to be brewed today.

Man that hop schedule sounds amazing, its going to be dam tasty.
I just bottled an APA, bit of a mismatch for the grain bill but I followed tasty McDoles hop schedule and man o man the aroma was awesome.
Sentiments on the yeast but hey, you gotta work with what you got.

That should be a stunner. APA`s really catching on now.

Interesting when they mellow out. They can become very subtle beers indeed.
If you can leave it long enough. Look forward to trying it.

Did an E.S.B a couple of weeks ago which due to increased efficiency started at 1.067 and went down to 1.017 and likewise I only had S04 in the cupboard. I thought that was pretty good for S04 which is not as attenuative as say Nottingham which I would have preferred to use.

I don't think this one will be subtle, it's ticking along nicely and looking like kegging time on thursday, I have dry hopped the fermenter as well, (soon as I was happy fermentation was going), the smell is just fantastic so am hoping this will live up to the aroma.

We shall see, have I to save you a bottle?

Well I have moved this onto a conditioning Tank (cheap pressure Keg) and added finings so hopefully will be bottling it on saturday, its dropped down to 1012 so I make it around 7.4% the smell is amazing those galaxy simcoe columbus and ammarrillo go together very well, and the taste is lovely even this young, a real nice amount of bitterness and I still have the flavour in my mouth over 1/2hr after sampling it, very hop forward, but balanced as well, after a bit of bottle conditioning (if I don't feck it up) I think this is going to be a stunning beer.

This has turned out to be one hell of a beer, and its going fast, I'm not sure how AIPA it is as I have never had an authentic fresh all american one, but its still a damn good hoppy as hell beer :thumb: :thumb:

It looks fantastic; I love the colour!
Out of interest, how long did you leave it to mature in the keg for before the urge to drink it became too strong?
 
Twas a fine beer, very subtle for 7%...the sort of beer that'd creep up on ye and then it'd be tomorrow :lol:
I'd be happy with this as a 'house ale', great brew S :thumb:
