Hi guys,

need your help. I set the brew up on Sunday. Has been fermenting quite weel over the last few days but now seems to have come to a srandstill. Is this normal. I thought six days at least. Tempreture is around 21-23 degrees so should be alright.
Any tips

It's fnished the main fermentation, the yeast is now slowly chewing through the less fermentable sugars which is why fermentation has slowed. . . . it is also clearing up any esters and oher 'flavour' componds that were formed earlier in the process . . . so while you can do something with it, the wisdom is to leave it for the full 6-7 days and then keg / bottle . . . or even move it into the cold for another 5 days to drop more of the yeast before casking and bottling.

sounds like I can relax. Not used to such a quick fermentation as I usually do wines. I will leave it for the full time and keg sunday
