I have just put in a bulk order for grains to do my first BIAB in the next few weeks. I am intending to do the brown porter, dry stout and Northern brown ale from the Greg Hughes book. I have a query about the hop addition "At turn off" in some of the recipes. I assume this means immediately after you stop the boil but when do you take them out ?
 
There's a bit of a debate as to when to add the "flame out" hops: straight after flame-out, or 10min later when the temp has generally dropped below 80C, so as not to extract extra bitterness. I used to religiously wait 10mins but lately I haven't been bothering, and I've not noticed any difference. Leave them in for 30min max.
 
Hi Jayk34 it does become a very grey area because your hop additions are only counted for until the boil is stopped if you are using a Brewing App but if you start to cool and leave the hops in you will get further IBU's which will add to the bitterness and that does not show in your recipe figures/stats.
I usually put my hops in a bag or hop spider so that I can remove them at Flame out so my IBU's are close to my recipe stats but if you are a throw the hops in it is impossible to remove the hops and during cooling they will be further bitterness extraction until you get below 80c when it is generally thought that bitterness extraction becomes nominal. So you may want to reduce your IBU's in your recipe to account for this or your beers may be more bitter than you wanted.
It is a very grey area when you are trying to follow another persons/breweries recipe as the fine details regards hop removal is not always clear so suck it and see is the only way sometimes
 
I've only remembered now that I ordered the hops as hop pellets as one of the varieties I required was only available in hop form.

I did buy a hop spider but if hop pellets dissolve (don't know if they fully dissolve) then the hop spider will not work and there is no way to remove them so it's just follow the addition timings ?

Use a fine mesh bag for the pellets. You can put the bag in the hop spider if you wish, but I just throw them in as I don’t mind a few extra IBUs in an IPA etc. Beer style and if it’s one just for me or for sharing would determine if I used a bag or not for pellets.
