Ok, having researched my options given my brew/stewpot pans and coming to the conclusion (on advice from said forum brewer that a 5 gallon pot won't be enough) that a 34 litre pan is the way to go. Given that one of those is like £65, it is worth my while just going to buy a brewing system instead? I do want to stick to BIAB though. Anyone have a heads up for me on which way to go?
 
Pick up a "manual water boiler" 40l is best 30is a bit tight but usable, Buffalo/Burco/Swan lots of makes buy second-hand if you can. There is no advantage to buying new, it it's cheap enough not working is an option then even fitting a low watt density element is worth it.
Rip out all the wiring connecting the elements to a plug. Build a controller with a PID/SSR/Pt100 combination then you can have a fully controllable system.

use a pt100 in favour a thermocouple.
