I've got a couple of days off between leaving my previous employer and starting a new job so it's time to make beer.....

Apparently it's the law that all saisons have to have some season related pun in the name.....

The plan.

4kg Pilsener malt
1kg Munich malt
300g Acid malt
60g wheat malt

Mash at 67C

45g Saaz(3.1%) 90 min
45g Saaz(3.1%) 20 min
10g Saaz (0 min)

WLP565 starting at 20C and raising to 28C over 10 days.

So far, mash on, hit the temperature exactly for the first time ever. I'm mashing quite thin(21l for 5kg) because I've only ever had good efficiency with thinner mashes.

1053 pre boil gravity (targeting 1046), I think I may have got better efficiency this time.

Reminds me, I need to brew up a batch of my "Tis the Saison..." ;-)
 
Cooled and pitched and safe in the fermenting fridge now. Measured starting gravity of 1063 (1055 target), I think I may have sorted my mash efficiency issues....
 
Dropped to a stready 1.010 on Thursday and Friday so I crash cooled to 5C and then bottled/kegged today. Slightly surprisingly the sour touch is much more marked today than it was in Friday's gravity sample.
