anybody have a charcoal recommendation? I currently use big K red bag stuff.
Currently I am using Green Olive premium lumpwood. Burns well, nice decent sized pieces. For briquettes, I always seem to come back to Weber.
 
Briquettes have additives and adhesives in them to make them solid. They’re made from wood chips and sawdust that gets burnt like normal wood to make the charcoal. It’s best to get a decent quality brand like Weber or Heat Beads, cheaper briquettes have all sorts of accelerants in them that potentially could taint the food.
The advantage is that they burn reliably and give out an even heat for a longer period of time. I use Weber briquettes in the Smoky Joe for beach BBQ’s, it’s a small unit and the 2 hr cook time from one chimney wouldn’t be achievable with lumpwood.
Lumpwood is irregular like Clint says, it burns hotter and faster and fire management can be a bit more difficult. But there’s no accelerants and there’s a range of varieties at different price points to try out.
 
I have toield with lumpwood in my ProQ for ages and never managed to keep the temp up, despite changing from water to sand in the pan.

Its briquettes next for me.

@Brewnaldo I’ve spent a very pleasant evening reading through it with a couple of beers outside. Going to do some sort of home made burger tomorrow evening, not sure which one, and throw some soaked mesquite chips on the coals before I cook.
The starters and sides look phenomena.
