Anyone done one?

Thinking of doing one for my next brew for Christmas

3kg Belgian pilsner
1.5kg Belgian wheat
1kg flaked wheat
300g American caramel
300g U.K. Amber


15g perle hops
25g saaz

1ltr apple juice
1.25g allspice
2.5g cinnamon
1.25g nutmeg
0.5 tsp vanilla extract


Thoughts?
 
If you want to add an appley flavour I found that wyeast 1469 fermented above 18C gives a pronounced soft apple flavour (not something I was actually aiming for)
 
Add some oatmeal (soaked, baked in the oven) to make it smoother and take the edge off some of the spices.
