Just been shopping in my local asda and found 5 bottles of James whites organic apple and ginger juice in the reduced section. I've had a little taste and it taste really good. So I'm thinking about making it into wine. I'm not sure on the amount of sugar to add and would this need to be boiled off to get rid of the anti - oxidant ascorbic acid that's in it. It's 98% organic apple juice and 2% ginger.

No need to boil it just use it as it is.

Follow the guide here to make it (switch the orange for your apple/ginger juice) http://www.thehomebrewforum.co.uk/showthread.php?t=49094

Try this recipe.

1 litre organic apple and ginger juice.

1 litre of White Grape Juice or Red grape juice.

800g Sugar.

1 tsp Tannin or a mug of strong black tea. (3 bags)

1 tsp Yeast (i use youngs super wine yeast compound)

1 tsp Yeast Nutrient.

1 tsp Pectolase.

1 tsp Glycerene.

1 tsp citric acid or juice of one lemon. (optional)

Ok thanks guys. I wasn't sure how much sugar to add because there is no info on the bottles about the natural sugar content. I have had a go at a few wows. I made a orange and exotic fruit and orange and cherry. I bottled them yesterday and must say I'm very impressed how they turned out.
