So I've bitten the bullet and set up a brewfridge with an STC1000, and am seven days into my first brew of St Peters Ruby Red Ale.
No problems as far as I can tell, I've had it running at 18DegC after pitching at 24DegC. OG was 1040 and is currently at 1018. I'm now planning to reduce the temp down to 15DegC for the next seven days to allow the brew to clear before bottling. I'd expect it to drop to around 1012 as an FG, will it still drop at the reduced temp or do I need to keep it around 18DegC? I took a sample yesterday which looked/ tasted great, but was very cloudy and quite yeasty....
Opinions please!
 
st peters say expect from this brew
OG 1042, FG 1010, so a ABV of around 4.3%
wait till your hydrometer reads nearer FG1.010 for a steady 2 days before cooling it to clear
your beer will be 2.9% abv at moment
wait till it drops to 1.010
AND IT WIL BE 4%
 
Great, just the answer I was hoping for!
Will leave it at 18DegC then for a few more days, then drop it down for another few days to clear.
