Hi, I've had a coopers ginger beer fermenting for 3 weeks now.
Which started off really slow.
I've take a reading today and yesterday which are the same, just above 1000, looks like 1001. but it's still bubbling every few minutes.
My question is, is it safe to bottle?

There's no hurry to bottle your beer, I hate bottling and often leave it in the FV for a week plus after the time the SG readings are consistent. Try it again tomorrow and if its the same as your last reading its ok to bottle, look at the clarity of the beer you will notice that it will clear even more if you leave it for a further week.

Patience is a great ingredient in home brewing!!

Ok thanks, if the ginger beer has stopped fermenting, but co2 being released.
Is there a chance that the bottle could explode once bottled??

No! Bottle bombs only happen if the beer is bottled before it has finished fermenting or too much priming sugar is used. Even then, it needs either an extreme or a faulty bottle.

I would not bottle as yet, obviously its still fermenting if it giving off C02! Wait a few days and check. Bottle bombs are not good, as i've had it happen, left two bottles of lager in my car on a very hot day!!

As I said, this is not necessarily the case.

I'm sorry i've got to disagree if the barm has fermented out it will not give off C02?

If it has finished fermenting, it will no longer produce any more CO2. However, it can release CO2 which is already held in solution.

Oh yes it wil, co2 will come out of solution just as it does when you open a bottle. There is no head pressure to keep it in.

I personally would leave it a while until it has settled and is clear. Leave it somewhere cool for a week, a concrete for of a garage is best. :thumb:

Ok people, so I've just taken a 3rd reading which is again 1001.
What's the verdict, bottle or not?

Sounds to me like it's ready for bottling, but I would take the advice given from graysalchemy, leave it for a week in the cool for it to clear first. Will give you a clearer beer in the bottle and I think it'll minimise the sediment left in your bottles too.
