    Many thanks for all your advice. I hadn't thought of adding a bit of red grape concentrate to restore the blush colour, so i might give that a try. Will keep in mind about the campden tablets having this effect when I make rhubarb wine later this month. Cheers

    Damson Wine

    Pectin enzyme and pectolase are the same thing. And its important for damsons as they contain lots of pectin (which is why they make such good jam!) and otherwise it will take ages for the wine to clear, if ever. Good luck!
