Got a good crop of damsons in the garden - SWMBO is making jam but theres some left over so Damson Wine is calling

Recipes call for pectin enzyme - is this Pectolaze??
 
Pectin enzyme and pectolase are the same thing. And its important for damsons as they contain lots of pectin (which is why they make such good jam!) and otherwise it will take ages for the wine to clear, if ever.

The pectolaze also helps get the flavour from the fruit if you add it early on. Also helps to freeze the damsons for at least 24 hours, helps get the juices flowing.

First wine i made was with damsons from the garden. If it comes out as good as mine did then don't let yer mates taste it cos you won't get to drink much yourself :cheers:
