I have noticed that this year there are loads of elderberries. Previously I have made elderberry wine, but after a scan through CJJ Berry's winemaking bible noticed a recipe for English Port using elderberries, blackberries, currants and sloes.

I was wondering if anyone else has made it before?

Yup you will need about 6lbs of fruit

This is an old recipe of mine which a few people have tried.

per gallon

2lb damsons
2lb elderberry
2lb blackberry
1lb raisins
1 tsp pectinase
2lb of sugar


Basically you can use any fruit with the elderberries oe push the elderberries upto 3lb. Demerara sugar is best.

I have one bottle which is 19 yrs old now and quite a few which are 15+ yrs. worth keeping a feww bottles back each year :whistle: :whistle:
