    You might get away without adding any nutients. What temperature is it now? if it between 18 and 20oC then i would personly add the yeast. As Moley said before, You can get away (in the short term) with a piece of cling film loosely held on with a rubber band.

    It should be ok, just remember to stand then on a tray just in case you get a vocanic fementation.

    Top up to the shoulder only. then once the initial fementation is over top up to the neck.

    As Samarith says, most country wines call for 1kilo of sugar to be from the start.

    The nutrient is there to give your yeast a kick start. The juice of the lemon is added inplace of citric acid, from my experiance with Ribena or Vimto wine there isnt any need to add it.

    What was the original recipe? as a % of 9.5 is low for any type of wine.

    100grms of Cascade would have cost you about £3, which would be enough to dry hop between 4 or 6 kits. but as i said im interested to see how it turnes out. Well im that interested ive just ordered some. So will be sending the Mrs to Wilkinsons tomorrow to get a YDBK to try it out on.
